Gwyneth Paltrow launches first Goop restaurant

Gwyneth Paltrow’s wellness brand Goop has opened its first dine-in restaurant, marking a strategic evolution from its delivery-only model to a physical dining space in San Diego. The new location is situated within the One Paseo shopping center in the coastal neighborhood of Del Mar, an area known for its affluent residents and emphasis on wellness and outdoor living. The restaurant occupies a space designed to accommodate 92 guests. While the menu remains rooted in Goop’s existing virtual offerings, the dine-in experience introduces a handful of exclusives, including a Field of Greens salad pizza topped with pesto, garlic confit, mozzarella, parmesan, and a fresh arugula salad, as well as a Strawberry-Goji Berry Palmer drink that aligns with the brand’s focus on nutrient-dense ingredients.

From newsletters to restaurant tables

Goop’s origins trace back to 2008, when Paltrow launched it as a weekly wellness newsletter that curated advice on beauty, holistic health, and lifestyle practices. Over the years, the brand expanded into a complex enterprise, eventually venturing into the food sector. The launch of Goop Kitchen in Los Angeles in 2021 represented a significant shift, transitioning the brand from theoretical wellness guidance to tangible, edible offerings. Initially operating as a delivery and pickup-only service, Goop Kitchen established 15 locations across California and three in New York, catering to customers who prioritized convenience alongside health-conscious dining.

The restaurant in San Diego was designed in collaboration with Michael Hsu Architecture and Paltrow.

Co-CEO Donald Moore described San Diego as a “natural fit” for Goop Kitchen’s first dine-in location, citing the city’s cultural alignment with the brand’s values. San Diego’s reputation for active living, farm-to-table dining, and a strong sense of community made it an ideal testing ground for the new concept. Moore’s statement emphasized the restaurant’s role as a gathering place, where patrons could engage in the slower, more mindful experience of sharing a meal. This vision contrasts with the fast-paced, on-demand nature of delivery services, positioning the restaurant as a space for connection rather than mere convenience. The choice of One Paseo, a mixed-use development that combines retail, dining, and residential spaces, further shows the brand’s intent to integrate into a lifestyle-centric environment.

The restaurant’s menu adheres strictly to Goop’s focus on “clean,” made-to-order food without refined sugar, seed oils, or processed additives. While the dine-in experience introduces new dishes, the location will continue to offer delivery and takeout, ensuring accessibility for those who prefer the brand’s original service model.

More locations planned, but details remain vague

The company has signaled plans for further expansion within the San Diego market, with potential locations in La Jolla and downtown identified as future sites. However, the specifics of these expansions remain unclear, including whether they will follow the dine-in model or revert to pickup and delivery hubs. This ambiguity reflects a cautious approach, as Goop handles the complexities of transitioning from a digital-first brand to a brick-and-mortar presence. The decision to open a full-service restaurant represents a significant departure from the lower-overhead virtual kitchen model, introducing variables such as staffing, real estate costs, and customer service trends that were previously less critical.

Goop’s move into physical dining aligns with a broader industry trend in which digitally native brands explore tangible retail or restaurant spaces to deepen customer engagement. For a company built on the principles of wellness, the restaurant offers an opportunity to control the entire customer experience. This level of oversight is particularly important for a brand that has faced skepticism over its wellness claims, as it allows Goop to reinforce its narrative in a controlled environment. The dine-in setting also provides a platform for storytelling, where the origins of ingredients, the preparation methods, and the health benefits of each dish can be communicated more effectively than through a delivery bag or online description.

Despite the potential advantages, the shift to brick-and-mortar dining carries inherent risks. Restaurants require substantial upfront investment, from lease agreements to kitchen equipment and staff training, all of which can strain a company’s financial resources. Additionally, Goop’s brand has long been polarizing, with some consumers adopting its holistic approach while others dismiss it as elitist or pseudoscientific. The San Diego location will serve as a critical test case, determining whether the brand’s health-focused ethos can translate into a profitable and sustainable sit-down restaurant. Success in this venture could pave the way for further expansion, while missteps might force a reevaluation of the company’s growth strategy. For now, the restaurant at One Paseo stands as a single, carefully considered step into uncharted territory, with no definitive timeline for the next phase of development.
