The International Dairy Foods Association (IDFA) reports that processors are deploying $15 billion in new dairy manufacturing capacity across 23 U.S. states. This expansion includes over 85 projects, such as new plants, line upgrades, and facility modernizations, that are either under construction or planned through 2030. The investment responds to rising domestic consumption and growing global export demand.

This scale of investment reflects strong confidence in dairy’s performance compared to broader manufacturing trends. According to the U.S. Bureau of Labor Statistics, inflation-adjusted dairy output is expected to increase nearly 30% from $138.5 billion in 2025 to $179 billion by 2035. This growth outpaces total U.S. employment growth of 3.5% and manufacturing’s 0.6% increase over the same period. Dairy product manufacturing jobs are projected to rise 5.6% in that timeframe.

Export data further supports the expansion. In the first half of 2026, U.S. dairy exports grew 9% in milk-solids-equivalent volume and 12% in value, reaching $5.31 billion. Cheese exports surged 24% during the same period.

Milk and cream processing leads the investment wave, with $5.63 billion allocated to this sector. Cheese production follows with $3.76 billion, while yogurt manufacturing secures $3.07 billion. Butter and powder production receives $1.86 billion, and ice cream manufacturing gets $745 million. Geographically, New York tops the list with $2.8 billion in projects, followed by Texas ($1.7 billion), Michigan ($1.43 billion), Wisconsin ($1.4 billion), and Pennsylvania ($1.4 billion).
